  •  Annatto Seeds: or achiote seed is brick-red with a slightly bitter, earthy flavor and imparts a rich yellowish-orange color in Caribbean, Latin American and Filipino cuisines. Used in: Enchildas de dos Gringos and Skirt Steak with Three Sauces.

  •  Chipotle Peppers: a smokey, fiery chili pepper made by smoking jalapeno peppers. Used in: Smokey Marys and Skirt Steak with Three Sauces.

  • Dehydrated Lemon Peel: the peel is removed, discarding any white pith that may lie beneath, and dried to preserve the flavor. Used in: Exploding Ribs.
  • Dehydrator: a device that removes moisture from food to aid in its preservation. Used in: Chinese Chicken Meatball Soup and Exploding Ribs.
  • Galangal: although this looks like Ginger it tastes more like pepper it is used in Thai food. Used in: Sugar Cane Smoked Lobster Tail.

  • Guanciale: an unsmoked Italian bacon prepared with pig's jowl or cheeks. Used in: Sunday Slices - Homemade Pizza.

  • Lemongrass: is used as a herb in Asian cuisine. It has a citrus flavor and can be dried or used fresh. Used in: Sugar Cane Smoked Lobster Tail.

  • Mexican Crema: the rich, delicately sour, slightly thickened cream used in Mexican cooking. Used in: Enchildas de dos Gringos.
  • Pressure Cooking: the process of cooking food, using water or other cooking liquid, in a sealed vessel that does not permit air or liquids to escape below a pre-set pressure. This allows food to be cooked with greater humidity and higher temperatures. Used in: Enchildas de dos Gringos, Chinese Chicken Meatball Soup, Smokey Marys, Duck Wonton Soup, Braised Short Rib Sandwiches, and Pad Krapow Moo Sandwich.

  • Soffritto: combination of sauteed onions, celery, and carrots. It is the base of Italian cooking. Used in: Ragu Bolognese.
  • SoffrittoSmoked Hickory Salt: achieve their flavor by being smoked. The smoke from these fires seeps into the salt crystals giving the distinctive and classic smoked taste. Used in: Chinese Chicken Meatball Soup, Smokey Marys, and Smoked Guacamole with Watermelon.

  • Tamarind: a pod with a hard, brown shell with a sweet and sour in taste. Used in: Sugar Cane Smoked Lobster Tail.

  • Thai Basil: native to Southeast Asia, it has small, narrow leaves and purple stems. A member of the anise family, it brings a licorous flavor. Used in: Sugar Cane Smoked Lobster Tail and Pad Krapow Moo Sandwich.

  • Weber Rotisserie attachment: is a heavy-duty electric motor with a wooden rod handle for smooth turning. Used in: Tequilla Citrus Pork Shoulder and Spit Roasted Root Beer Duck.
